Four Different Types of Breakfast Recipes (2 Hot and 2 Cold)
Mornings can be difficult for many different reasons. Let's not make breakfast a reason to start your day on the wrong foot. Here are four different healthy rice cake recipes for people who are always in a rush or on the go. There are two cold options and two hot options. For the hot options, I recommend making these ahead of time and then reheating them in the morning. I hope that making your breakfast in under 5 minutes will aid you in having a wonderful start to your day. Not to mention the important fuel you will need to complete your daily conquests.

Rice Cake 1: Monkey's Delight (Cold)
Ingredients:
Rice Cakes
Natural Peanut Butter
Banana Slices
Cacao Nibs or Vegan Chocolate Chips
Honey
Instructions:
1. Spread a layer of peanut butter on the rice cake.
2. Slice a banana and place it on top of the peanut butter.
3. Sprinkle with cacao nibs or vegan chocolate chips.
4. Drizzle with honey.
5. Enjoy!

Rice Cake 2: Good Morning Guacamole (Cold)
Ingredients:
Rice Cakes
Avocado
Everything Bagel Seasoning
Tomato
Balsamic Vinaigrette (Optional)
Fresh Basil (Optional)
Instructions:
1 Cut and mash one avocado in a bowl.
2 Spread avocado onto the rice cake.
3 Top with everything bagel seasoning. This is difficult to find in Costa Rica so I use a mixture of onion powder, garlic powder, sesame seeds, and a dash of salt.
4. Cut one slice of tomato and place on top of the avocado mash.
5. Wash the basil and place 2-4 leaves on top of the tomato. (Optional)
6. Put a dash of balsamic vinaigrette over the top of the rice cake. (Optional)
7. Enjoy!

Rice Cake 3: Bean Bake (Hot)
Ingredients:
Rice Cakes
15.5-ounce can of white beans
1/2 Cup of Diced White Onion
2 Large Cloves of Garlic Diced
1-2 Tomatoes
2 Tablespoons of Tomato Puree
1 Tablespoon of Honey
1 tsp of Apple Vinegar
1/2 tsp salt
1/2 Cup of Fresh Basil
Olive Oil
Avocado Slices (Optional)
Instructions:
1. Dice the onions and garlic and heat up in a pan with olive oil.
2. Dice tomotoes and add to pan.
3. Open a can of white beans and rinse. Add beans to pan.
4. Mince 1/2 cup of basil and add to the pan.
5. Add tomato puree, honey, apple vinegar, and honey to the pan.
6. Cook until done.
7. Spread bean mixture onto rice cake.
8. Top with avocado slices (optional).
9. Enjoy!

Rice Cake 4: Mushroom Madness (Hot)
Ingredients:
Rice Cakes
Garlic Hummus - Try my homemade recipe by clicking HERE
1/2 White Onion Diced
2 Large Garlic Cloves Diced
2 Cups of Sliced Mushrooms (Mushrooms of Your Choice)
1 tsp of Thyme
1/2 tsp of salt
1/2 tsp pepper
1 Cup of Fresh Basil or Spinach
Olive Oil
Instructions:
1 Dice onion and garlic. Place into a pan with olive oil and start to saute.
2 Slice mushrooms and place in pan to saute 2 minutes after onion and garlic.
3. Wash fresh basil or spinach. Place into the pan to saute.
4. Add salt, pepper, and thyme.
5. Spread hummus onto a rice cake.
6. Place the mushroom mixture on top of the hummus.
7. Enjoy!

Additional Information:
Use natural peanut butter whenever possible because natural peanut butter excludes sugar or reduces the amount of added sugar. Brands of natural peanut butter are, but are not limited to: Smucker's, Crazy Richard's, MaraNatha, Once Again, Wild Friends, Thrive Market, and Earth Balance. Of course, this recipe will work with whatever peanut butter is in your house, but I just want you to be aware of the added sugar.
There are many ingredients in the traditional Everything Bagel Seasoning which includes: poppy seeds, white sesame seeds, toasted sesame seeds, onion flakes, garlic powder and salt. While in the United States, you can easily find this in a variety of grocery stores. I myself would buy it at Aldi for $1.95 a bottle (Stonemill). However, Everything Bagel Season is near impossible to find in Costa Rica. I often make my own that only includes sesame seeds, onion powder, garlic powder and a dash of salt. It's definitely not the same, but it hits the spot.
Rice cakes are not all made the same. If you are gluten-free, like me, you need to make sure to check the labels. Many rice cakes will include barley or kamut, which are not gluten free. Some companies will also include gluten in additives or flavors. Some gluten free rice cake choices available on AMAZON are: Made Good, Kupiec, Smartbite, and Lundberg Farms.
